There is a particular pleasure, on holiday, in not going anywhere at all. No reservation, no drive back down the hill, no keeping the children presentable past nine o’clock. The pool falls quiet, the light turns gold on the Tramuntana, and dinner simply happens around you — cooked in your own kitchen by a professional chef, served at your own table, ending whenever you want it to end.

A chef for the evening
The classic. Your chef arrives in the late afternoon with everything needed, and while you have a drink by the pool, the kitchen comes to life. Menus are built around what is best that week — fish from the bay, lamb from the island’s interior, tomatoes and stone fruit from the Pollensa market — and shaped entirely to your table: a slow Mediterranean tasting menu for a table of adults, or a simpler family feast with something the children will actually eat. When the last plate is cleared and the kitchen returned to order, the chef slips away and the evening is still yours.
Paella and showcooking
Some meals are theatre, and paella is the best of them. A showcooking lunch brings the whole performance to your garden: the huge pan over the flame, the sizzle of sofrito, the rice going in with a flourish, and the moment — every Spaniard’s favourite — when the socarrat crackles at the bottom. Guests drift over with a glass of something cold, ask questions, stir when invited. It is as much entertainment as catering, and it turns an ordinary Tuesday of your holiday into the lunch everyone remembers.
Breakfasts, groceries and the quiet services
Not every good meal needs a chef in the room. We arrange pre-arrival grocery packs so the fridge is full when you walk through the door after a late flight; morning deliveries of bread, pastries and fruit from Pollensa’s bakeries; and cold platters — cheeses, Ibérico ham, salads, local wine — ready for your first lunch by the pool. The very best version of a villa holiday is the one where the practical questions have been answered before anyone thinks to ask them.
